About the Winery and the Winemaking Process
XIX was harvested in October 2007 of 100% Cabernet Sauvignon grapes, all produced on Echo West’s 25 acres of Cabernet stock overlooking Oregon’s Umatilla River. Spring was warmer than usual in Oregon that year, with early budding launching the beginning of a longer growing season. Cool summer temperatures extended the maturation process as well, further encouraging the developing of more concentrated fruit on the vineyards’ Cabernet stock. Following hand-selection of the grapes, separation out for the must, and full fermentation, the XIX wine was aged in Hungarian Oak caskets for a total of 18 months.
